1. Honey-Lemon Ricotta Breakfast Toast
INGREDIENTS
- 2 slices of whole grain or gluten free bread
- 1/4 cup low fat ricotta
- 1/2 fresh lemon, juiced
- 1/2 tablespoon honey
- 4 figs, sliced
- 2 tablespoons pistachio pieces
- 1 teaspoon lemon zest
INSTRUCTIONS
Toast bread in toaster. While bread is toasting, whip
together ricotta, lemon juice and honey until smooth and creamy. Spread ricotta
moisture evenly over each piece of toast, then top with sliced figs. Sprinkle
each piece with pistachio pieces and lemon zest. Serves 2.
