I used this recipe my very first time using my new instant pot. It was great for an instant pot Recipes lunch newbie. The only criticism I have is that the broth doesn’t have much flavor (I used low-sodium veggie broth), so I upped the salt and spices, which helped a lot. Also, corn starch works fine instead of tapioca starch. Overall an awesome recipe with a few modifications.

Ingredients

3 c vegetable broth can use water but this is better
6 red potatoes diced
3 c half and half
4 ears corn
2 tbsp corn starch + 2-3 tbsp water
3/4 c cheddar cheese
3 tbsp butter
1/4 onion diced
Pinch of salt

Instructions
  1. First dice all of your veggies.
  2. Then out Instant Pot on saute and upload butter till melted.
  3. Add diced onions and cook dinner till cushy.
  4. Continue to add vegetable broth, diced potatoes, and corn got rid of from the cob.
  5. Can upload pinch of salt now.  Close lid and shut steam valve. Set to drive top for 10 mins.
