I really liked this simple change-of-pace. My kids weren't big fans (should have left the slaw off of theirs) and my husband said it was good, but not as good as other recipes I make.

Ingredients

3 cups cooked and shredded chicken
1 1/2 cups of your favorite barbecue sauce, divided
8 tostada shells or 8 corn tortillas, brushed lightly with olive oil and baked for 3-5 minutes per side, until crispy
3 green onions, very thinly sliced
2 cups shredded cheese

Instructions
  1. First preheat your oven to 350°F. Lay out the tostada shells (or baked tortillas) on two rimmed baking sheets.
  2. Then combine the rooster and 1 cup of the barbeque sauce in a small bowl, and stir to coat.
  3. Divide the rooster between the tostada shells and most sensible with the cheese (about ¼ cup on each and every).
  4. Bake for six to eight mins, simply till the cheese is melted.
  5. Remove from the oven and drizzle with the remainder ½ cup barbeque sauce. Sprinkle with inexperienced onions, if desired.
