One Pot Thai Chicken



I’m a huge fan of Thai anything, but especially Thai food with a little lemongrass. It’s comforting yet fresh at the same time and full of so much flavor.


Ingredients

  • 2 tablespoons butter
  • 8 bone-in skin-on, chicken thighs
  • Sauce
  • 1/2 cup thai sweet condiment
  • 2 Tbs condiment
  • 2 Tbs creamy paste
  • 2 tsp minced garlic
  • 2 Tbs oyster sauce
  • 1/2 Tbs ginger paste
  • Juice of one lime
  • 2 tsps Sriracha or alternative sauce
  • Garnish
  • 1/4 cup peanuts sliced
  • chopped recent cilantro leaves


Instructions

  1. Preheat kitchen appliance to four hundred degrees F.
  2. Whisk along sauce ingredients during a tiny bowl, and put aside.
  3. In a giant oven-proof pan, over medium heat, soften butter, and place once fusible, place chicken, skin-side down into pan.
  4. Sear each side till the skin is sweet and golden brown, and crispy. This takes regarding three minutes per aspect.
  5. Remove from heat, and switch chicken skin aspect up (should already be), and canopy with sauce.
  6. Place into kitchen appliance and roast for 25-30 minutes till chicken is seared through (165 degree internal temp).
  7. Turn kitchen appliance on to broil, and broil 2-3 minutes to crisp everything up and additional caramelize the sauce.
  8. Garnish with peanuts and cilantro, and serve.
